Ground Pork Asian Lettuce Wraps

Ingredients:

  • 1 head of bib/butter lettuce

  • 1 lb of ground pork*

  • 1/2 yellow onion, chopped

  • 1/2 cup shredded carrots

  • 2 Tbsp. fresh ginger, grated

  • 2 Tbsp fresh garlic, minced

  • 2 Tbsp olive oil

  • 3 green onions, chopped with the white bottoms separated from the green tops

  • 8 oz can of water chestnuts, chopped

  • 1/2 cup of hoisin sauce

  • 2 Tbsp soy sauce

  • 1 Tbsp rice wine vinegar

  • 1 Tbsp Sriracha

  • 1 Tbsp sesame oil

Directions:

In a pan, heat olive oil and then add garlic and yellow onion until they’re translucent. Continue stirring so they don’t burn.

Add the ginger and cook an additional 2 minutes.

Add the pork and brown.

While the pork cooks and in a separate bowl, combine the hoisin sauce, sesame oil, rice wine vinegar, Sriracha, soy sauce, the white bottoms from the green onions and the water chestnuts. Whisk it all to combine.

Wash and dry your lettuce leaves.

Once the pork has cooked through drain the excess grease and add the carrots.

Add the sauce and cook for another five minutes.

Serve immediately.

*If you are looking to cut calories and fat, you can use ground chicken.
