Horseradish Roasted Chicken (Just Trust Me)

Prep + Cook Time: One hour, 45 minutes (most of this is cooking time)

Calories: 262 per serving

Ingredients:

  • 3 to 5 lb whole roasting chicken (be sure to check the cavity for giblets and remove them)

  • 1/2 c. peeled and finely shredded/grated horseradish root (found in the produce section)

  • 2 tbsp. maple syrup

  • 2 tsp olive oil or cooking oil

  • 1 tsp chili powder

  • 1 tsp salt

Directions:

  1. Preheat oven to 375 degrees.

  2. Rinse chicken, pat dry with paper towels (be sure to check the cavity for giblets and remove them)

  3. Cut slits in skin of breast and drumsticks.

  4. Stir together horseradish root and maple syrup. Stuff this mixture in the slits and run into meat so mixture is spread evenly under the skin. Brush chicken with oil.

  5. Combine the chili powder and salt. Run this mixture over the chicken and inside of the body cavity.

  6. Pull neck skin under the bird and place the chicken, breast side up, on a rack in a shallow roasting pan.

  7. Roast uncovered for 1 1/4 to 2 hours or until drumsticks move freely and the juices run clear.
