Korean Ground Beef and Rice Bowls (or Lettuce Wraps)

Serves: 4

Prep + Cook Time: 20 minutes

Calories: 238 per serving, not including rice

Ingredients:

  • 1 lb lean ground beef 

  • 3 garlic cloves minced

  • 1/4 c. packed brown sugar

  • 1/4 c. reduced-sodium soy sauce

  • 2 tsp sesame oil

  • 1/4 tsp ground ginger

  • 1/4 tsp crushed red pepper flakes (add more or less, to taste)

  • 1/4 tsp pepper

  • 2 c. hot cooked white or brown rice or one head butter lettuce, washed

  • sliced green onions and sesame seeds for garnish

Directions:

  1. In a large skillet cook the ground beef and garlic breaking it into crumbles over medium heat until no longer pink.

  2. In a small bowl whisk brown sugar, soy sauce, sesame oil, ginger, red pepper flakes and pepper. Pour over the ground beef and let simmer for another minute or two.

  3. Serve over hot rice and garnish with green onions and sesame seeds. Alternatively, wrap in butter lettuce leaves.
