Mediterranean Tuna Antipasto Salad

Ingredients:

  • 2.6 oz. drained, Starkist Chunk Light Tuna

  • 4 ounce, canned garbanzo beans (rinsed)

  • 1 tbsp chopped red onion

  • 1/2 tbsp chopped parsley

  • 0.25 tsp chopped Rosemary

  • 8 grape tomatoes

  • 0.25 cup chopped red bell pepper

  • 1 mini cucumber, sliced or chopped

  • 0.50 Medium avocado, diced

  • 0.50 tbsp red wine vinegar

  • 1 tbsp olive oil

  • Sea salt, to taste

  • Fresh ground black pepper, to taste

Directions:

Combine beans, tuna, bell pepper, onion, parsley, rosemary in a medium bowl. Season with pepper. Combine the lemon juice, oil, and red wine vinegar in a small bowl. Pour dressing mixture over salad and toss.

Serve as is or on the greens of your choice.
