Watermelon Daiquiris

Serves: 2

Prep + Freeze Time: 2 hours, 5 minutes

Calories: 295 per serving

Ingredients:

  • 4 cups frozen seedless watermelon cubes - if your watermelon in not frozen, freeze for 2 hours

  • 4 ounces light rum (1/2 c.)

  • 2 ounces fresh lime juice (1/4 c.) — you can use bottled juice

  • 2 ounces orange juice (1/4 c.) — I’ve made it without this and it was yum, just added more lime juice

  • 1 to 2 tablespoons simple syrup* (to taste - use more or less, depending on the sweetness of your fruit)

Directions:

  1. Mix frozen watermelon cubes, rum, lime juice, orange juice, and simple syrup in a blender until smooth. (Start with 1 tablespoon of simple syrup and add additional, to taste.) Stop to scrape the sides of the canister occasionally if not using a high speed blender.

  2. Serve immediately, garnished with a wedge of lime.

*To make simple syrup, combine equal parts water and granulated sugar in a saucepan. (1 cup water to 1 cup sugar). Heat, stirring, until sugar is dissolved and small bubbles begin to form around the side of the pan. Remove from heat and let cool to room temperature. Store in an airtight container in the refrigerator for 3-4 weeks.
